Sibona MAeCO' Gin
MAeCO' MEANS MARE E COLLINA — SEA AND HILL. A PREMIUM DRY GIN BUILT ON TWO LANDSCAPES, DISTILLED FROM ONE UNIQUE RECIPE.
The name is a clue. MAeCO' — mare e collina, sea and hill — tells you exactly where this gin comes from and how it was conceived. Sibona's Premium Dry Gin draws its botanicals from two very different Italian landscapes: the hills of Piedmont and the Ligurian coast, each contributing its own distinct character to the final blend.
From Piedmont: juniper berries, lavender from Sale San Giovanni, sage, rosemary, Damascena rose and Nebbiolo vine leaves. From Liguria: lemon, thyme, Pernambuco orange and DOP Genovese basil. Each botanical is distilled separately to extract its character as cleanly as possible, then blended by Sibona's master distillers to a unique and closely guarded recipe.
The result is fresh, floral and citrus-forward — then diluted with Eva natural spring water, sourced from the highest spring in Europe at 2,042 metres, before being chilled and filtered to 42% ABV. The bottle, made from emerald-green recycled "wild glass", reduces CO₂ emissions and raw material waste. Good provenance, inside and out.
Tasting notes
Clear with a faint green tint from the bottle. The nose is fresh and aromatic — citrus leads with lemon and orange, sage and thyme threading through, and a distinctive floral layer from the lavender and Damascena rose.
On the palate, elegant and well-rounded — citrus and floral notes in confident balance, with the Genovese basil adding a quietly herbal complexity that lifts the mid-palate. The Nebbiolo vine leaves bring a subtle, distinctive character that you won't find in any other gin.
The finish is persistent and fresh — lavender, orange and lemon holding cleanly through a long, fragrant close.
