FRÜH gives us everything we look for in a partner.
Independent family ownership. Genuine provenance. A clear point of view. And a product that earns its place without relying on the history printed around it.
It arrives with more than 120 years of brewing behind it, but does not taste old-fashioned. It is traditional without becoming heavy, distinctive without becoming difficult and serious about quality without taking itself terribly seriously.
That is why we are partnering with FRÜH.
Not simply because Kölsch deserves to be better known in Hong Kong, but because FRÜH shows exactly why it matters.
The story starts in Cologne.
The next round is in Hong Kong.
We are proud to partner with FRÜH, a fifth-generation family brewery and one of the names most closely connected with Cologne’s famous beer.
FRÜH has been brewing Kölsch since 1904. The original brewhouse still stands beside Cologne Cathedral, the recipe remains unchanged and the beer is still brewed in the city that gave the style its name.
There is plenty of history here, but that is not why we chose it.
We chose FRÜH because the beer is excellent. Fresh, floral and beautifully balanced, with gentle bitterness, lively carbonation and the sort of drinkability that makes an empty glass appear rather sooner than expected.
The Cologne story gets people interested.
The beer gives us something we cannot wait to pour in Hong Kong.
WHY WE CHOSE fruh
Not every city gets its own protected beer style.
Cologne has made excellent use of the privilege.
FRÜH does not simply produce Kölsch. It represents the culture around it: cold glasses, busy tables, generous hospitality and another beer arriving before anyone has made the mistake of asking for one.
That sense of place matters to us. FRÜH is not a heritage name attached to a beer made somewhere more convenient. It remains family-owned, is brewed in Cologne and has spent more than 120 years becoming part of the city’s identity.
More importantly, it gives us a beer with a very clear place in Hong Kong.
FRÜH is distinctive enough to interest serious beer drinkers, but approachable enough that nobody needs a detailed explanation before ordering it. It is light, crisp and refreshing, yet carries more fruit, texture and personality than an ordinary lager.
Hong Kong knows what to do with a beer that is cold, food-friendly and happy in company.
So do we.
top fermented low-maintenance
Kölsch is one of beer’s more useful contradictions.
It is top-fermented like an ale, then conditioned to achieve the clarity, freshness and clean finish more commonly associated with lager. The result brings together the best parts of both without making a great ceremony of it.
FRÜH Kölsch has a fresh, lightly floral aroma, lively carbonation and a gentle balance of sweetness and bitterness. At 4.8%, it has enough flavour to remain interesting and enough restraint to remain extremely easy to drink.
That combination is surprisingly difficult to achieve.
Plenty of beers can make an impression in the first sip. FRÜH manages something rather more useful: it makes you want the second glass.
And then becomes remarkably good at suggesting a third.

FINISHED RATHER QUICKLY
FRÜH still uses the original recipe developed by Peter Josef Früh in 1904.
The brewery has modernised since then, which is generally advisable after more than a century. What it has not done is rush the beer.
FRÜH gives fermentation and maturation the time they need, following the principles of Slow Brewing. Since 2014, it has been the only Kölsch brewery to carry the Slow Brewing seal, with the beer and brewery independently assessed against hundreds of quality criteria each year.
That patience shows in the glass.
The flavours feel settled, the carbonation bright and the finish clean. Nothing sticks out unnecessarily. Nothing has been added simply to give the marketing department more adjectives.
It is careful brewing disguised as effortless refreshment.

ONE CITY.
ONE VERY PARTICULAR BEER
FRÜH opened beside Cologne Cathedral in 1904 and quickly became part of the city’s daily life.
That connection has never really loosened. The historic FRÜH am Dom remains a Cologne institution, while the brewery continues to support the traditions, rituals and wonderfully efficient drinking culture surrounding Kölsch.
The beer is traditionally served in a tall, narrow 20cl glass known as a Stange. In Cologne’s brewhouses, the Köbes brings fresh glasses without waiting to be asked and marks each one on the beer mat.
To stop proceedings, the drinker places the mat over the glass.
Until then, the system assumes everyone is behaving sensibly and would like another beer.
We admire the optimism.
More importantly, we admire what sits behind the ritual: Kölsch is designed to be fresh, sociable and shared. It is less about studying the glass and more about enjoying the people around it.
That feels entirely right for Hong Kong.
