Sibona Italian Whisky Premium Blend with Peated Malt
ITALY DOESN'T DO WHISKY. EXCEPT IT DOES. AND IT'S DOING IT VERY WELL INDEED.
Sibona — holder of distillation licence No. 1 in Piedmont, awarded Italian Distillery of the Year seven consecutive times at the Meininger's International Spirits Award — has done something few people expected and fewer still can argue with. They've made a whisky. And not a novelty. Not a box-ticking exercise. A genuinely considered, genuinely excellent premium blend that takes Scotch tradition, puts it through Sibona's copper bain-marie pot stills, and produces something with its own clear identity.
The blend combines unpeated and peated malts, both distilled in the traditional bain-marie method Sibona has used for generations. Ageing takes place in small oak casks — former peated whisky barrels, which do exactly what you'd expect: they deepen the smoke, add layers, and give this Italian whisky a backbone that would raise eyebrows at a blind tasting. The water used in production comes from one of Europe's highest mountain springs — above 2,000 metres — and you can taste the purity. Even the bottle is considered: recycled "wild glass," which reduces CO₂ emissions and gives each bottle a faint, distinctive character of its own.
This is what happens when one of Italy's great distilleries decides it has something to say in another language.
Tasting Notes
Deep, warm amber. The nose leads with cocoa, leather and honeyed sweetness — all hallmarks of Sibona's character — before defined peated notes move in, measured and purposeful rather than overwhelming. On the palate it is velvety and persistent, with elegant spice, dried fruit, and a finish that lingers with gentle fruity and spiced undertones. Smoke is present throughout but never dominates — this is a blend that's been thought about, not just assembled.

The interplay of smoke, honey, cocoa and spice makes this a versatile companion at the table.
Aged hard cheeses — Parmigiano Reggiano, Pecorino, aged Cheddar
Smoked salmon or cold-smoked fish
Oysters — the smoke works beautifully
Dried fruit and nuts — walnut, hazelnut, fig, raisin
Dark chocolate — 70% and above
Charcuterie — aged salumi, prosciutto crudo
Neat, as a contemplative digestif
