Sibona Grappa XO Aged Cuvée
TEN YEARS IN THE MAKING. THE FINEST EXPRESSION IN THE SIBONA RANGE.
XO means Extra Old. In the world of fine spirits it's not a label anyone can claim — it belongs only to those aged in wood for a minimum of ten years. Sibona's XO project started with a simple question: what happens when you take the best marc from the most celebrated vineyards in Langhe and Roero, distil it with obsessive care, and then simply leave it alone for a decade?
The answer is in the glass. A special cuvée built from Nebbiolo — the same grape behind Barolo and Barbaresco — and Barbera, rested for over ten years in small French oak tonneaux deep in the distillery's historic cellars. Not rushed. Not forced. Just time, oak, and craft doing exactly what they do best.
The result is a grappa unique in its category — warm, complex, and quietly exceptional. Made in limited quantities by design, because this is what happens when a distillery with distillation licence number one decides to show what it can really do.
Tasting Notes
Deep amber with golden highlights. On the nose, refined and elegant — an initial vinous character that opens gracefully into vanilla and ripe red fruits. The palate is smooth, silky and beautifully structured, with layered notes of tobacco, blackcurrants and oak that linger long after the glass is empty. A finish that earns the XO designation completely.
