Sibona Grappa Riserva in Botti da Sherry
SOME BARRELS JUST KNOW WHAT THEY'RE DOING.
The Sherry cask is one of the most celebrated vessels in the ageing world — trusted by Scotch distillers, revered by brandy makers, and now, in the hands of Sibona, applied to Nebbiolo marc with a level of precision that makes a very compelling case for itself.
The same copper pot stills. The same licence-number-one Piedmontese distillery. The same uncompromising approach to raw material. But here, the spirit rests in hand-selected ex-Sherry casks that leave their mark in the most generous way possible — layers of dried fruit, toasted almond and warm spice that wrap around the natural intensity of the Nebbiolo without ever smothering it.
The result is a grappa that feels both distinctly Italian and genuinely surprising. Which, when you think about it, is exactly the point.
Tasting Notes
Rich golden amber. The nose opens with notes of dried apricot, sultana and toasted almond, underpinned by warm spice and a whisper of orange peel. The palate is round and generous — honeyed fruit, gentle nuttiness and a soft sweetness from the Sherry wood, balanced by the natural grip of the Nebbiolo marc. The finish is long, warm and quietly complex.
