Sibona Grappa Riserva in Botti da Madeira
FOUR YEARS IN WOOD — THE LAST TWO IN MADEIRA WINE CASKS — AND A MOSCATO GRAPPA THAT REWARDS EVERY MINUTE OF THE WAIT.
Grappa has always been the spirit that surprises people. Sibona's Riserva in Botti da Madeira is the bottle that settles arguments. Two years in classic oak, then two more in casks sourced directly from Madeira — formerly used to mature some of the island's most celebrated fortified wines. An approach borrowed from the whisky world, executed with Piedmontese precision and a raw material the whisky industry cannot replicate.
The base is Moscato marc from Piedmont — aromatic and naturally delicate. The Madeira cask leaves a distinctive mark: dried fruit, honeyed richness and a subtle wine-like quality that sets this grappa apart from anything else in its category. Gold medals at the Internationaler Spirituosen Wettbewerb confirm what the glass already tells you.
Tasting notes
Warm amber, with a nose of peach blossom, orange peel and soft dried fruit — Moscato's character still present beneath four years of wood. The palate delivers lychee, tangerine and baked apple, with a honeyed mid-palate that speaks directly to the Madeira cask. The finish is long and gently warm, with fine oak, candied citrus and a freshness that keeps it from ever feeling heavy.
Producer: Distilleria Sibona
Expression: Riserva in Botti da Madeira
Country: Italy
Region: Piedmont
Raw material: Moscato marc (pomace)
Production method: Copper pot still distillation
Ageing: 4 years — 2 years in oak barrels, followed by 2 years in Madeira wine casks
Colour: Warm amber
ABV: 44%
Bottle size: 500ml
Perfect serve
Serve at room temperature in a small tulip-shaped grappa or nosing glass, ideally around 16–18°C. This allows the Moscato aromatics and Madeira-cask complexity to open fully without the alcohol becoming dominant. No chilling, no ice. Take a moment before the first sip — the nose is half the pleasure.
Food pairing
The dried-fruit richness and warm oak of the Madeira finish make this a natural companion at the close of a meal, and a serious alternative to dessert wine.
Dark chocolate and praline
Almond and hazelnut pastries
Panettone and dried-fruit breads
Aged hard cheeses
Blue cheese with honeycomb
Poached pear with caramel
Tiramisu
Affogato
The honeyed complexity and long clean finish cut through the bitterness of dark chocolate and complement the caramelised notes of pastry. Aged and blue cheeses hold their own against the spirit's weight and are lifted rather than overwhelmed by its finish
Storage
