Sibona Grappa Riserva Barolo 8 Anni

HK$0.00

IF FIVE YEARS BUILDS CHARACTER, EIGHT YEARS BUILDS SOMETHING CLOSER TO PHILOSOPHY.

There's a point in the ageing of a great grappa where the spirit stops developing and starts settling. Where the wood and the marc stop negotiating and reach something like understanding. Eight years is well past that point. What you find at eight years isn't a grappa that's still becoming — it's one that has fully arrived.

Sibona's Barolo 8 Anni begins in the same place as the 5 Anni — freshly harvested Nebbiolo marc from Barolo DOCG vineyards, copper pot still distillation, the full weight of licence number one behind every decision. But then comes three additional years of patience that most distilleries either can't afford or won't commit to. Sibona commits.

The result is a grappa of genuine authority. Deep, complex, and layered in ways that only time can produce — the kind of spirit that makes you put down whatever else you're doing and pay attention.

Tasting Notes

Deep mahogany amber with warm copper highlights. The nose is immediately commanding — aged leather, dried fig, toasted hazelnut and a deep thread of dark spice, with the mineral backbone of the Nebbiolo still very much present beneath. The palate is full, rich and structured — dark fruit, dark chocolate, walnut, tobacco and warm oak, with a complexity that continues to evolve in the glass. The finish is exceptionally long and layered — spice, dried fruit and warm wood fading in slow, unhurried waves.
