Sibona Grappa Riserva Barolo 5 Anni
FIVE YEARS. IN BAROLO TERMS, THAT'S JUST GETTING STARTED.
Barolo is not a wine for the impatient. The Nebbiolo grape — all tannin, structure and hidden complexity — demands time to reveal what it's actually capable of. The Barolo producers who understand this don't rush. Neither does Sibona.
The marc from some of Piedmont's finest Barolo vineyards arrives at the distillery freshly harvested, goes through Sibona's copper pot stills with the precision that has defined the house since licence number one, and then waits. Five years in oak — long enough for something genuinely interesting to happen. Long enough for the raw intensity of the new spirit to soften into depth and complexity. Long enough to earn the name on the label.
The result is a grappa that carries the full character of the Nebbiolo — mineral, complex, with that signature tannic grip — but wrapped in the warmth and roundness that only time in good wood can provide. Five years. Worth every one.
Tasting Notes
Rich amber. The nose is composed and assured — dried fruit, toasted oak, leather and a thread of the Nebbiolo's characteristic minerality running beneath. The palate is rounded and full, with notes of walnut, dark cherry, warm spice and vanilla from the wood, all underpinned by the natural structure of the Barolo marc. The finish is long, elegant and warming — spice and fruit unwinding slowly into a clean, persistent warmth.
