Sibona MAeCO' Invecchiato — Port Cask Aged Gin

HK$0.00

SAME BOTANICAL PHILOSOPHY. PORT CASK AGED. AN ENTIRELY DIFFERENT CONVERSATION.

MAeCO' Invecchiato begins where the original leaves off. The same Piedmont and Ligurian botanicals — juniper, lavender, sage, rosemary, Damascena rose, Nebbiolo vine leaves, lemon, thyme, Pernambuco orange and Genovese basil DOP — but this time rested first in stainless steel, then for several months in former Port wine casks sourced from some of Portugal's most prestigious houses.

The result is recognisably MAeCO', but with considerably more to say. The citrus and floral character of the original is still present — softened, rounded and layered with the dried-fruit warmth that only a quality Port cask can deliver.

Bottled at 44% ABV in Sibona's distinctive notched bottle with integrated pouring spout, this is a gin built for those who already know what they like — and are ready for something that takes it a step further.

Tasting notes

Warm amber in the glass, the colour telling you something before you've lifted it. The nose is rich and inviting — dried fruits and gentle Port sweetness over the familiar base of citrus, lavender and Damascena rose. On the palate, full and rounded; the botanicals integrated and mellow, the cask lending warmth and depth without ever dominating. Genovese basil and Nebbiolo vine leaves still register quietly, threading through the richness with characteristic precision. The finish is long, soft and gently warming.

Perfect serve

Neat or on the rocks: Nick & Nora or small tulip glass. This is a gin composed enough to sip without apology — the Port cask character makes it as much a contemplative pour as a cocktail ingredient.

Gin & Tonic: Large balloon or Copa glass over hand-cut ice. Premium light tonic — nothing too assertive. Garnish with a slice of blood orange and a piece of dried fig to echo the cask character.

Cocktail: Exceptional in a Negroni, where the Port cask integration adds depth and dried-fruit complexity without heavy sweetening. Also outstanding as the base for an Old Fashioned-style build with Angostura bitters and an orange twist.

Food pairing

The warmth and dried-fruit character from the Port cask give MAeCO' Invecchiato a particular affinity with rich, savoury flavours — while the botanical base retains enough precision to cut through richness with ease.

Aged Parmigiano Reggiano or Pecorino with honey

Charcuterie — particularly aged salumi and bresaola

Dark chocolate (70% and above)

Slow-cooked duck or game

Truffle dishes

Cheese boards with fig jam or dried fruit

The Nebbiolo vine leaves and Genovese basil thread through the richness with characteristic quiet precision, making this a genuinely versatile partner at the table.
