Antica Distilleria Sibona Liquore alla Camomilla
CHAMOMILE FLOWERS, SLOW-INFUSED IN SIBONA GRAPPA. SOFT, FRAGRANT AND UNLIKE ANYTHING ELSE IN THE PORTFOLIO.
Chamomile is not a botanical that demands attention — which is precisely what makes this liqueur interesting. Sibona has taken one of Italy's most familiar flavours and given it the grappa treatment: chamomile flowers, slow-infused in Sibona's own fine grappa to a traditional recipe, resulting in a liqueur that is gentle in character but genuinely complex in flavour.
The grappa base gives it structure and a quiet warmth that a neutral spirit simply wouldn't provide. The chamomile gives everything else — the fragrance, the honey, the white flower softness and that distinctly herbal finish. The result is morbido, fragrante e amabile, as the Piedmontese say — soft, fragrant and pleasant, with the aromatic depth that only this particular flower can give.
A digestivo for people who find most digestivi too aggressive. A nightcap for people who actually want to sleep afterwards. One of the quiet pleasures of the Sibona range.
Tasting notes
Burnished gold in the glass. The nose is immediately and distinctly chamomile — honey, peach nectar, white flowers and a soft beeswax note that draws you in without demanding anything of you.
On the palate, honey and peach nectar lead, with the delicate warmth of the grappa base threading underneath. White flower notes build through the mid-palate before the finish turns gently herbal — a light, pleasantly bittersweet close with a suggestion of mint and dried chamomile.
The texture is soft and rounded, the sweetness well-measured.
