There comes a point when Ruby Port begins to leave its youth behind.

The colour softens. Fresh berries turn towards dried fruit. Oak brings spice, nuts and caramel into the conversation. Quevedo Tawny Porto has reached precisely that point.

It is blended from cask-aged Ports with an average age of five years. Long enough to develop character, but not so long that the fruit disappears beneath the wood.

The grapes are completely destemmed before fermenting slowly in temperature-controlled stainless-steel vats. After fortification, the wine begins its maturation in stainless steel before moving into seasoned French oak and chestnut balseiros.

What emerges is a Tawny that still remembers being young. Dried red fruit, plums and raisins sit alongside fresh hazelnuts and almonds. Spice arrives first on the palate, followed by fruit, caramel and a finish that feels drier and more composed than the richness might suggest.

This is where Tawny Port gets interesting. Mature enough to show what time can do. Fresh enough to make sure you notice.

Quevedo blends the wine from different harvests to an average age of five years before gently filtering it for bottling.

Tasting notes

Garnet at the centre, fading to brick around the edge.

Dried red fruit, plum and raisin lead the aroma, with fresh hazelnut and almond beginning to show the influence of time in wood.

The palate opens with spice and a final trace of youthful red fruit. Dried fruit and caramel build through the middle, followed by a balanced, gently drying finish.

Not old. No longer young. All the more interesting for being somewhere between the two.

Perfect serve

We would serve it lightly chilled at 12–14°C in a small wine glass.

Too warm and the alcohol begins to take over. Too cold and the dried fruit, nuts and spice retreat into the background. Give it a slight chill and enough time in the glass to open.

There is no need to wait for dessert. Tawny Port works perfectly well before dinner, particularly if salted nuts or cheese happen to be within reach.

Tawny Port & Ginger

Tawny Port already brings dried fruit, caramel and spice. Ginger ale simply gives those flavours more room to move.

The result is lighter than drinking the Port neat, but still recognisably Tawny. A useful drink for people who insist Port is only for the end of the evening.

Ingredients

  • 50ml Quevedo Tawny Porto

  • 100ml chilled ginger ale

  • Fresh orange slice

  • Plenty of ice

Method

Fill a large wine glass with ice and add the Tawny Port.

Top with chilled ginger ale and stir gently. Finish with a fresh slice of orange.

Four ingredients, if we count the ice. That should be manageable.

Food pairing

Milk chocolate and roasted nuts are the natural place to begin. The chocolate meets the Port’s caramel sweetness, while the nuts draw out the influence of its time in wood.

It also works with chocolate fondue, cream-based desserts, almond tart or a simple plate of dried fruit and cheese.
