Ruby Port is made to hold on to its fruit. Quevedo takes that instruction seriously.
The grapes come from high-altitude plots in the Douro, selected for the freshness and purity they bring to the final blend. They are completely destemmed, then slowly fermented with native yeasts before fortification.
Ageing takes place in stainless steel, away from oxygen. There are no barrels here to soften the colour or steer the wine towards dried fruit and nuts. The point is to keep the Port looking, smelling and tasting of young red fruit.
And it does. Red cherries and cherry jam lead, followed by dark chocolate, spice and a turn of black pepper. The tannins are gentle, the middle of the palate is slightly dry and the sweetness never gets the final word.
This is Ruby Port as it should be: generous, uncomplicated and very good company when chocolate or blue cheese appears.
Tasting notes
Deep, saturated ruby in the glass.
Red cherry and cherry jam come first, with dark chocolate and black pepper sitting just behind. The palate is packed with young red fruit, warm spice and cocoa, held together by gentle tannins and a slightly dry mid-palate.
Rich enough to feel like Port. Fresh enough to remind you that fruit, not weight, is the point.

Perfect serve
Serve slightly chilled at 14–16°C in a small wine glass.
There is no need to decant it. This is a young Ruby made for immediate drinking, not an archaeological project.
Once opened, keep the bottle cool and enjoy it within three to four weeks. That should not present a serious logistical problem.
Cocktail serve
Ruby Port & Ginger
Ruby Port does not need much interference. Ice, ginger and orange are enough.
The ginger draws out the wine’s pepper and spice, while the orange keeps all that cherry and chocolate from becoming too comfortable.

50ml Quevedo Ruby Porto
100ml chilled ginger ale
Fresh orange wedge
Plenty of ice
Method
Fill a highball glass with ice and add the Ruby Port.
Top with chilled ginger ale and stir gently. Squeeze in the orange wedge, then leave it in the glass.
Simple. Cold. Considerably more refreshing than its colour suggests.
Food pairing
Dark chocolate is the obvious answer. Preferably the serious kind, with enough cocoa to meet the Port on equal terms.
Blue cheese works for the opposite reason. Its salt and sharpness cut across the sweetness, while the Port’s ripe cherry fruit softens the edges.
Quevedo also recommends berry pies. Blackberries, raspberries and cherries all make sense—especially when pastry is involved.
