50ml Tarsier Oolong Tea Old Tom Gin
20ml fresh lemon juice
10ml simple syrup, made at a 2:1 ratio
1 tablespoon fresh pear flesh
1 fresh egg white

Method
Add the pear to a cocktail shaker and muddle gently. Add the gin, lemon juice, simple syrup and egg white, then shake without ice. Add ice and shake again until thoroughly chilled. Fine-strain into a coupe and garnish with a fresh pear slice.
