Tarsier Calamansi Citrus Gin was inspired by the white-sand beaches of El Nido in the Philippines, where local vendors serve freshly squeezed calamansi juice over ice. That simple, refreshing drink became the starting point for a gin built around one of Southeast Asia’s most distinctive citrus fruits.
Calamansi has a flavour that sits somewhere between lime and mandarin, bringing both sharp citrus freshness and a softer, aromatic sweetness. Yuzu adds further notes of grapefruit and lemon, while makrut lime leaf contributes a fragrant citrus character beneath the brighter fruit.
Juniper remains present throughout, supported by coriander seed, angelica, orris root, orange peel and lemon peel. The result is a layered but approachable citrus gin: vibrant enough to enliven a classic G&T and structured enough to retain its personality in cocktails.
Serve it with classic Indian tonic, red grapefruit peel and fresh thyme, or use its combination of calamansi and yuzu to bring a vivid citrus edge to a Negroni.

Method
Add the gin, sweet vermouth and Campari to a mixing glass filled with ice. Stir until chilled, then strain into a rocks glass over fresh ice. Garnish with orange peel.
